Birthday Meringues Recipe

So, is my mum's birthday and I wanted to make her a cake. The first issue with that being the fact that flour is extremely short in supermarkets. No problem, I thought. I would go to Morrisons and buy a cake. The next issue is that supermarkets are limiting the number of people allowed inside, leading to queues around the car park. Thankfully, we have sugar and eggs. Meringues it was.



Ingredients
3 eggs
175g white caster sugar
1/2 tsp vanilla/salted caramel extract 

Method
  1. Preheat oven to 140°C/fan 120°C/gas 1
  2. Line a baking tray with greaseproof paper (or tin foil if, like me, you seem to have run out and can't get to the supermarket)
  3. Separate egg whites from yokes (this is messy- but not as impossible as it seems)
  4. Whisk egg whites to soft peaks 
  5. While whisking, add sugar one tbsp at a time (if you have somebody else around to do this- it helps!)
  6. Whisk until mixture is stiff and glossy
  7. Add extract and whisk until combined
  8. Using a metal spoon, place 6 dollops of meringue mixture on baking paper, well-spaced out
  9. Bake for 1/2 hours. If you prefer meringues mallowy, 1 hour 1/4 would be fine!
  10. Remove baking paper, then transfer to a wire rack
  11. Serve with fruit, yoghurt, cream, or ice cream

    I made my grandma a giftbox for her birthday a couple of days ago, and since everything is closed, had to find bits n pieces from around the house to put in the giftbox and it turned out pretty good!
